How to Eat Arugula?

You’ve grown arugula , now it’s time to eat it properly. The taste of arugula is delightful—nutty, mustardy, slightly tangy, and spicy. Arugula enriches the flavor of bland vegetables, chicken, and pasta. It’s a piquant addition to vegetable salads.

Try a few simple and affordable recipes with arugula.

Italian Salad with Arugula

A bunch of arugula
2-3 ripe tomatoes
A few leaves of oregano (or a pinch of dried oregano)
A few basil leaves (or a pinch of dried basil)
Green onion and garlic to taste

For the dressing:

A bit of lemon juice, vegetable oil, soy sauce (instead of salt) to taste, peppers. Dice or quarter the tomatoes, as you prefer. Tear the arugula by hand or chop it coarsely, finely chop basil and oregano. If the herbs are dried, add them to the dressing. Mix the lemon juice, soy sauce, oil, and peppers together. Pour the dressing over the salad. This salad might not be authentically Italian, but it’s very tasty. At the moment, most of the ingredients for this salad are growing on my windowsill— arugula , basil, tomatoes , and oregano .

Spicy Arugula and Peach Salad

A bunch of arugula
A sprig of basil
Unsalted cheese (like Adyghe or mozzarella)
A peach or nectarine
Parsley

For the dressing:

Vegetable oil, salt, vinegar or lemon juice, honey, peppers, a garlic clove.

The combination is absolutely divine! Slice the nectarine, cut the cheese into strips, tear the arugula and basil by hand, and chop the parsley. The amounts of ingredients are left unspecified intentionally—adjust to your taste. Mix the dressing and drizzle over the salad.

Arugula Pesto

100 grams of arugula
Garlic
A handful of walnuts
Aged cheese (Parmesan is perfect)
A glass of fresh basil
Olive oil

Toast the walnuts in a skillet for about a minute, grate the Parmesan, and blend all the ingredients in a blender. Add as much oil as the paste will absorb. Serve with spaghetti, toasted bread, or flatbread.

Arugula Burritos

Flatbread or pita bread
A bunch of arugula
A bunch of leaf lettuce
Green garlic and onion (optional)
Mild, unsalted cheese
Boiled meat of your choice
Your favorite tomato sauce or ketchup

I prefer boiled meat, but the recipe calls for finely chopped meat that should be fried. Add the sauce, finely chopped onion, and garlic to the meat. Lay out the greens on flatbread, grate the cheese, and add the meat. Add peppers, mustard, and various herbs to taste. This is a great option for breakfast or as a snack. My husband loves taking a burrito to work for lunch—his coworkers get jealous. :)

For the dressing:

Sour cream, salt, a bit of mustard. Dice the eggs, chop the arugula and dill, and slice the green onions. Mix with the dressing. You can even serve this salad on a festive table!
