I will tell you about the use of coriander seeds in cooking. It’s best to buy whole coriander seeds and grind them immediately before use, for example, crush them in a mortar for soups and sauces, or grind them in a coffee grinder for marinades for poultry and meat.
Coriander with Meat
Eastern-style Chicken Wings
- 10 chicken wings
- 2 tbsp of soy sauce
- 1 tbsp of mustard oil (or any vegetable oil)
- 1 tsp of ground coriander
- 1 garlic clove
- 1 tbsp of honey or 2 tsp of sugar
- peppers to taste; salt is not needed.
Mix the ingredients for the marinade. Cut the wings at the joints, marinate them, and let sit for several hours, up to 2 days. Occasionally stir the wings for even coating. You can also add ginger to this marinade.
Mini Bread with Coriander
- 100 ml of water
- 150 grams of rye sourdough starter
- 1 tsp of coriander seeds
- 1 tsp of mustard oil or sunflower oil
- 115 grams of first-grade flour
- 140 grams of rye flour
- 1 tbsp of sugar
- salt to taste
How to prepare a sourdough starter can be found here . Dilute the sourdough starter with water and add rye flour until the consistency of sour cream, then leave it in a warm place overnight. Take 150 grams of the starter, mix it with 100 ml of water, and add a pinch of salt, sugar, and coriander. Add rye flour, then wheat flour, and knead the dough. Divide the dough into 4 parts. Place the dough in silicone molds, cover with plastic wrap, and leave in a warm place for 2 hours. Bake for 20 minutes at 200°C. Let the bread cool in the oven.
